How do I delete saved or previous wallpapers on iPhone?

iOS keeps every lock-screen wallpaper you've used. To clear them: lock the screen, long-press, swipe up to see the gallery, then swipe up on each card and tap the trash. There's no "delete all" button — you do it one card at a time.
